JOSEPH BAYLEY, CHEF, OWNER
Joe was born and raised in the Pacific Northwest with a stint in the Philippines, his mother’s native homeland. After pursuing a degree in Hospitality Management at Washington State University, Joe utilized his ability to cook to travel learning and honing his craft where he ultimately decided to formalize his education at the highly regarded French Culinary Institute in New York City. Upon graduating at the top of his class, Joe competed on Food Network’s competition series Chopped where he emerged victorious defeating established NYC Chefs. The decision to learn more drove Joe to accept an internship in San Sebastian, Spain at the Michelin rated Kursaal (Now Ni Neu) where he learned about the connection of food and culture. After finishing in Europe, Joe accepted a Sous Chef position at the acclaimed Boqueria in Manhattan where the time to learn the business of a restaurant was in order. In 2014 Joe needed to go home to Seattle, where he could use his cultivated skills and experience to carve out his own niche and establish himself in a market needing his style.
